Simple fish recipes please!

Having looked at our meal plans, we need some more fish in our diet! I only seem to do a couple of recipes - baked salmon and fish pie so wondered if anyone had any nice fish recipes that could entice us to put it on the meal plan.

I love Gordon Ramsey Thai fish fillet- any white fish, cod, cobbler etc. Dip in egg then dip in crushed unsalted peanuts. Fry for 3-4 mins on each side

But then too with a sauce made from rice wine vinegar, corriander, chilli, fish sauce, touch of sugar. It's from his "recipes to stake your life on" and is so simple and yet so scrummy

Mackrel is a beautiful fish when pan fried or bbq'd simply with lemon

Smoked haddock on a bed of spinach with a poached egg on top. Lovely.

Cut some beetroot up into smallish chunks. Add oil and place in a hot oven. After about half an hour, fry some salmon fillets skin side down in some hot oil until skin crisps up nicely. Put on top of beetroot skin side up for about another 10 minutes. Serve with some horseradish cream or similar. If you want more precise timings, google it. I think it is a Waitrose recipe and is v tasty.
