Foolproof slow cooker recipe with only basic ingredients?

Hi ... My first post within this topic, hope someone can help me.

I've got a slow cooker which i'd really like to make better use of but every single time I have tried to use it, meals have been awful! I've tried Savoury and sweet, followed recipes to the letter and always end up disappointed. At best meals have been edible but not at all tasty and at worst, I've simply had to throw them away. I really don't know what I do wrong.

Anyway I'm going to be out all day Monday so a slow cooker meal will really help - I only have a few ingredients though - potatoes, carrots, onions. Frozen peas/mixed veg. Meat is either chicken breasts or beef mince. Plus basic store cupboard supplies. Need a meal for 3 adults and 2 toddlers. C

You need meat that needs longer to cook. I wouldn't bother with chicken breasts or lamb mince tbh.

Get some lamb neck or stewing steak - that's when slow cookers come into their own.

Chicken breasts are not fatty enough.

I do chicken thighs, brown lentils, chicken stock and root vegetables.

And
Lamb shanks, pearl barley, tin of tomatoes, glug of red wine and carrots.

Throw all your veg in with some chicken thighs (breast or mince not so great), top up with water, seasoning, bay leaf, buy some fresh baguette on your way home.

We have just had slow cooker lasagne. It's great, but only takes 3-4 hours (so no good if you want to start in the morning).
Make a bolognese sauce, mix a tub of ricotta with nearly all of 200 gr pack of grated mozzarella, layer in your slow cooker with lasagne sheets (start with bolognese, pasta, ricotta, end with bolognese). Half an hour before dinner take the lid off, sprinkle on the rest of the mozzarella and leave it to melt with the lid off. Serve with salad.

Ok thanks - will see if I can pick up some different meat before Monday then.

Love the idea of slow cooked lasagne!
