corned beef hash

Does anyone have any good corned beef hash recipes they would be willing to share? i know its probably a really simple recipe but I have never made it and cant even remember the last time I ate it so couldn't even tell you what goes into it apart from the obvious corned beef and potato!
I thought it would make a nice change from the usual things I make

Be warned: corned beef is much more expensive these days. It is lovely though.

The way we do it here is fry two large chopped onions until soft. Meanwhile peel chop and boil potatoes for mash. Two tins of corned beef cubed add to the onions and fry it will go into a big mush and not stay cubed. When heated through add the mash and fold in to the corned beef and onions. You can put it in the oven to brown and crisp up if you wish.

My mum makes hers with cubed par boiled potatoes and then sautéed them off adding the onion and corned beef.

Serve with a fried or poached egg. Xh used to like beans with his as well.

Two tins and two onions makes enough for 6 adult sized portionsaybe even stretch to 8 smaller portions so it's easily halved if need less.

Oops sorry x-posted with DramaAlpaca. I have made it quite a few times and it's always turned out fine and tasty, even though I say so myself. The mustard and Worcestershire sauce give it a good flavour.

Oh yes and if you do follow the Delia recipe, don't skip putting the tea-towel over the potatoes, and make sure you drain them thoroughly - you want them pretty solid and as dry as you can before you start frying, so that they stay in their cubes.

Something else that you can make with corned beef - pinaculty (sp?) It's a northern dish I believe, so easy and really tasty. Slice corned beef (slices better if it's been in the fridge), potatoes and onions and layer in a casserole dish. Pour over beef stock and a generous seasoning of pepper. Put in the oven for an hour and a half. Delicious :-)

Chopped cauliflower is really nice added to it, and you can use it to replace potatoes if you're on a low carb diet. Chunks of roasted beetroot or chopped peppers are also nice in it. Now thinking of doing a hash with potatoes and chopped peppers but using chorizo instead of corned beef....

And you have to have a fried egg on top!
