Sour cherries or sweet ones? For a sweet cherry pie, I pit the cherries, give them a toss with 1/2 cup sugar and 1/2 cup cornstarch (cornflour, maybe), and a little lemon zest. Pile into a pie crust, dot with butter, top with crust and cut vents, or do lattice.

If it's sour cherries, you'll want about 2 cups of sugar and the rest is the same.

I bake it for almost an hour. I'd give you a temp, but I've never gotten the hang of the oven temps you use

oh there was a lovely one in Good food last month or one before. Cherry clafoutis tart. I made it and was yum and I don't usually eat puddings. Let me know if you want the recipe - is with fresh cherries and ground almonds in a sweet pastry case.
