Got a fridge full of nonsense, or indeed, rather lacking in anything?

This thread is to help those stumped for ideas with what they have lurking in their fridge/freezer/cupboard and need to knock something up.

I am here quite a lot, and as a professional (resting) cook I would relish the challenge to help people out!

Ooh I have a challenge for you - I'm allergic to eggs. Is it possible to make an eggless quiche or Yorkshire pud? I'd love to try making toad in the hole.

ah well..if you chopped them really really tiny she might not notice, or whizz them into a kind of bruxelles and then mix with the onions? Just don't tell her?

DS used to refuse onions until I started telling him they were garlic. Go figure.

I tried an egg free mix for omelettes a few years ago and it was like eating plastic. It's put me off them, can you recommend any?

Maybe they are better as part of a recipe rather than the main ingredient?

Great thread idea!
What to do with opened double cream if you are low-carbing? (ie do not want to put on pud or make pasta sauce)

oh yes and pescetarian (I am not, dp is)

Maybe a creamy mushroom sauce served on greens for me, pasta for him? or can you come up with something cooler?

They love sweet potato.

Mildred - mushrooms fried with garlic and onion then splashed with wine and then doused in cream are lovely, especially with a lemony salad alongside.

creamy mushroom sounds great.

Also creamed onions with cherry toms is fantastic.

you can do it one of two ways, one is nigel slaters recipe, plus cherry toms niges onions in cream and parmesan which is lush, and makes it quite substantial. but a bit faffy with the old halved onions.

I personally melt down generously sliced onions (think half centimetre) in butter til soft as soft can be, add the cream and parmesan and whole cherry toms and cook until the toms have softened.

Double cream is great as it does not split very easily, and be be got back with a bit of hot water.

I had mushrooms stuffed with Stilton and breadcrumbs once - they were gorgeous and I don't even like Stilton.

Or I bet you could make some sort of bake with broccoli maybe?

try using the simon rimmer pie filling mixture upthread? would be nice on a variety of veggies. perhaps a mix of spinach and peas?

I'll definitely give the eggless quiches a go. Thanks. Could sour cream or natural yoghurt work instead of creme fraiche? That's all I have in.

you can always make a great sauce with double cream or creme fraiche to make a good gratin. leak and stilton would be good.

I would use the sour cream as it has a higher fat content than most yoghurts, unless you have a full fat one, in which case mix with the sour cream.

actually the Rimmer filling would be even nicer with some cream, sour cream, creme fraiche, yoghurt stirred in.
