Got a fridge full of nonsense, or indeed, rather lacking in anything?

This thread is to help those stumped for ideas with what they have lurking in their fridge/freezer/cupboard and need to knock something up.

I am here quite a lot, and as a professional (resting) cook I would relish the challenge to help people out!

I will hold your hand still! I can't imagine why you tried parsnip risotto....no no no!

Not your fault at all!

Worried I was lazy for asking for ideas earlier, so in order to redress the balance slightly I recommend this recipe as a family fave. DH is usually the cook here & he makes this loads, he does add a little chilli though and we have been known to buy fresh tomatoe sauces www.deliaonline.com/recipes/main-ingredient/pork/meatballs-with-spaghetti-and-fresh-tomato-sauce.html Smile

Gemizzel · 02/01/2014 19:18

I have cooked a gammon joint today that I asked my dh to get from supermarket while he was there and he came back with virtually half a pig!
We have had gammon and veg for tea tonight but don't really know what to do with the rest (other than ham sandwiches)
Do you have any low fat ideas?
I have the usual store cupboard basics
TIA

MadameDefarge · 02/01/2014 19:18

oh I love that recipe!

how big is big? Can you hack off loads and freeze?

OP posts:
Gemizzel · 02/01/2014 19:23

Not sure on weight but was nearly £10.. I didn't think it was that big when I put it in slow cooker this morning and then when I've cut it up it's basically fallen apart as it's been cooking all day and now there looks to be loads!
So I'm left with a big shredded pile of meat :/

goodasitgets · 02/01/2014 19:33

Give it to me Grin
I will eat it stuffed in toasted buns laden with coleslaw and BBQ sauce
Or possibly make some form of cheesy pasta with it
(Can you tell I can't eat because of my damn tonsils?!)

too late now...

but a slice off a gammon joint fries up into a very superior bacon.

Gemizzel · 02/01/2014 19:47

Agreed - it's so tasty
It's just ... a BIG pile Grin
I shall make dh have it everyday as punishment for buying prob the biggest joint in there Wink

MadameDefarge · 02/01/2014 19:49

Ah well, I can't help after the fact!

but thrilled at the gammon into bacon extravaganza!

Look up "pulled pork" which I've had as a plate meal, or in a bun with barbie sauce, in Canada.

MadameDefarge · 02/01/2014 21:26

Its a slightley different way of cooking pork. You need to cook it a lot longer so it falls apart at the touch of a fork...

Madame, was your vegetable bake recipe ? I love the M&S one but would like to make one myself

ARealPickle · 02/01/2014 22:27

I have a 300ml single cream, 4 different coloured peppers, half a broccoli, tub of cranberries, various knobs of cheeses all left over. ..

We have a ham in the freezer but happy to buy other bits to help use up current bits of that makes any makes sense!

(There was a tv programme where you started with random ingredients wasn't there?)

PeanutPatty · 02/01/2014 22:34

Ready Steady Cook!

MadameDefarge · 02/01/2014 22:38

ooh i am salivating here!

slice all your gorgeous peppers. Saute an onion (and a bit of garlic if you like) add the peppers and floreted broccoli. (dont chuck out stems, peel, chop and add. cook down. Add the cream. Season with salt and pepper. EatBeats self over head grate in whatever cheese you fancy, let it melt down.

add to pasta, baked potatoes...

This would be enough for me, but I can see a moment when some finely diced ham would add an extra oomph....

for the extra cranberries, just get out the ham as and when, bake off some spuds, make a great green salad, and serve.

Please keep this thread!! You'll save so much waste and pennies!

PeanutPatty · 02/01/2014 22:59

I've got chicken thighs, red peppers x2, frozen mushrooms, frozen baby corn and basic store cupboard stuff.

MadameDefarge · 03/01/2014 13:43

I love chicken thighs, cheap, delicious, versatile.

this is along the lines of what I was thinking

I have a jar of plum tomatoes chutney that no one else will eat and I'm already fed up of eating it alone. Have some nice ham, some parsnips, few tomatoes too.

MadameDefarge · 03/01/2014 19:08

up, do need a recipe that everyone will eat?

OP posts:
Upcycled · 03/01/2014 19:48

Just any recipe please. Can I put it in pasta sauce?

MadameDefarge · 03/01/2014 19:52

chutney is so strong I would advise using it a a flavour booster to stews, bolognaise (veggie and meat).

You could also mix it with yoghurt to make a dip or a sauce for that yummy ham.

another nice way to use it is to mix it with grated cheese and do cheese on toast...
