Recipes to use up brandy cream?

Any ideas? I have a pot of brandy cream in the fridge that needs to go. Was thinking creme brulee but can't find a recipe that uses the stuff rather than adding a shot of brandy. Any other recipes would be appreciated too.

Depends if you have any left over Christmas Pud too - Christmas pudding ice cream - mush together the pudding and the brandy cream and mix in a pot of fresh custard. Freeze. Eat. Nom

There are various recipes on-line for Christmas pudding ice cream - and if you don't have any leftover you could buy one dirt cheap at the moment - you only need a little bit.

Fishfingers that sounds fab. The pud is long gone but can always buy more.

I would just buy more mince pies and have one for breakfast every day until it gets used up.

The problem is that I then have to buy more brandy cream so that there's enough for the extra mince pies...

I would whip it all and divide it into little plastic pots/yoghurt pots and freeze.It defrosts perfectly..this was the wonderful mumsnet tip I learned last yr when I had oodles of cream left over.It has changed my life always having whipped cream ready in the freezer.

You can make a similar icecream with bashed up mince pies too, if you have these left instead?

Does freezing cream really work?

Just brandy cream or normal as well?

Think I tried normal once but it sort of separated when it came out of freezer

Freezing ordinary whipped cream works perfectly.I usually whip a large pot of it and divide it into smaller containers and freeze them .If you think about it,frozen gateaux like black forest etc that you can buy in the supermarket,has frozen whipped cream in it .Frozen whipped cream defrosts beautifully and doesnt separate at all.So handy to have in the freezer.

So you have to whip it first?

Is it the whipping that makes it freezable then?
