It's huge and is for 10 people but I want some left for a soup - how to make Christmas just that bit more stressful!!

Please can someone give me an idea of how to cook it:

Roast, bake or boil
What to baste it with
How long to cook it for ?

Thank you. Lovely mumsnetters!

Assuming you don't have a pot big enough to boil it in, I'd opt for one of the larger roasting bags, add a cupful of water, seal and snip off a corner, then roast for 1 hour per kilo at about 180C. No need to baste as the water will steam it. When you get to the end of the cooking time allow the joint to cool in the bag so that you can handle it.

For a traditional finish carefully strip off any rind leaving a layer of fat. Score the fat into diamonds with a sharp knife and insert a clove into each crossover point. Mix plenty of brown sugar with a good dollop of mustard, smear over the scored fat and the return to a hot oven for about 20 minutes so that the glaze crisps up the fat a little.

Thank you! I do have a pot large enough to boil it - so will it still need 1 hour per kilo?
