Cooking goose for first time

Hi all

I am cooking goose for Christmas, haven't cooked it before and looking for some tips for it to be the best! Lovely bird and don't want to ruin it.

then again each time we buy one it comes with a little recipe book
and save the fat it lasts months Grin

My MIL scoops out all the fat from the neck before it goes in the oven. There is loads of the stuff. Otherwise you have to drain the fat off while its cooking which with a hot pan & large goose is quite tricky.
