How long will vacuum packed fresh salmon keep in fridge?

I have a side of vacuum-packed fresh salmon which we're going to eat on Christmas Eve, which doesn't have a 'use by' label.

I was going to freeze it until Tuesday (it was bought yesterday) but will the vacuum pack extend its shelf life in the fridge?

And any great ideas about how to cook it? I was planning to poach it and make a lemon mayonnaise.

Chilled food has a shelf life of three days before it starts going a bit off. I'd be a bit more cautious with meat and fish but you might be able to push to 4 days as it's vacuum packed. Not much help sorry! As for recipe ideas how about a lemon mousse as oppose to a mayo or a cheesecake style dish, oatcakes as a base, cream cheese with mixed herbs and salmon on top. I'm sure whatever you make will be lovely
