Filling for brandy snaps?

I've mad esome brandy snaps to have in in the Christmas period and was thinking of filling them with whipped cream, candied peel with grated chocolate on top. Does this sound nice to you? I was thinking also of doing something like a creme anglais but I don't know how to get it to set.

Ideas welcome!

Whipped cream is the traditional route- maybe flavoured alcohol creams for the adults?

Brandy/ Cointreau / Irish cream / whiskey etc?

They sound yummy though!

Sounds lovely, except for the candied peel.

I once had home-made brandy snaps filled with ginger-flavoured whipped cream. Mmmmm heavenly. I think she sweetened the whipped cream with the syrup from a jar of preserved ginger. Utterly wow.

If you use enough cornflour in the creme anglais it will set fine. Or you could make a white chocolate creme anglais by mixing in melted white chocolate instead of sugar once it's all cooked. The cocoa fat will help the creme anglais set.

Not sure about the candied peel. I can see strawberries (or tinned mandarin - drained) working, just not for me. Bit of a purist when it comes to brandy snaps. My Pa made the best ones I've ever had.

The candied peel comes from an idea about canoli, which I love, and it feels sort of Christmassy to me. It's for Christmas pudding after roast goose. I didn't want anything too heavy.

Very interesting information about creme anglais, thankyou. I'm a bit scared of trying it, but still might.

I put ginger in the brandy snaps, otherwise I might have done that.

I am very impressed with how easy brandy snaps are. I thought they were going to be dreadfully fiddly but they are a doddle. My new party trick!

I love candied peel, just can't see the textures working.

If the snaps are already gingery, then I'd go for something completely different and fairly dainty in the filling. Vanilla, mandarin or Baileys would all work, I think.

Chocolate, white or dark is a given. Goes with virtually anything!

Sounds delicious. I wouldn't bother with the chocolate on top though. The cream and candied peel sounds lovely.

It would just be a little bit of peel, not lots. I might just grate a bit of zest on the top.

Sorry for ignoring all the suggestions of Baileys: I just can't stand it myself
