Don't know if this helps .. But ...
Cut up nice bits of leeks , discarding any nasty dark green bits .
Wash and drain
Put in saucepan with bit of butter and salt and pepper
Cover and cook , then add double cream , lid off and cook a bit more .
Sometimes I grate a bit of cheddar in too ...

thanks both of you that was definitely what i was thinking about. the one i saw you were able to freeze and cook on the day. or maybe just cook the day before and pop in the fridge.

i do cheesey leeks....have done them for years.

chop them, saute briefly in butter and season well. I put mine into a shallow dish, pour over double cream or creme fraiche/milk, not to drown the leeks but def cover the bottom of the dish and creep up the sides a bit, then cover with a generous layer of grated cheese.

into the fridge at thi point if you are prepping.

then they need to go into a very hot oven for about 20 minutes on the day.

Yes. The jamie oliver one I do the day before and microwave on the day to save time/hob space.
