I've made a Madeira cake yesterday for a party tomorrow which is now all wrapped up and air tight. I've also got to decorate it with buttercream icing only and wondered if i do it today will the cake stay fresh underneath? (First time making Madeira cake!)

Hiya - I'd leave the cake wrapped up airtight until the last minute and then ice it right before the party.

Cheers for that - just worried about the length of time this cake is going to take to ice! I never normally ice anything and this cake has to be a castle! I've got enough decorations to hide my mistakes I hope.

You can pre make the icing, put in fridge and then whisk before you use
