I bought a couple in the Asian supermarket this morning, I've never tried them before so what shall I do with them? Any suggestions?

They go amazingly with a fry up or even a fried egg and plantain sandwich is the shizzle. There is two ways to slice them, either slice across on an angle or cut them into thirds and slice into long strips. Heat oil in frying pan and fry till brown on both sides with a bit of salt.

Fry them as a side dish with just about anything.

Depends what colour they are. If green, they will be "savoury". Cut them into thickish discs, fry over medium heat and then squash. Continue to fry.

If they are yellow or black, they will be sweet. Cut them into thirds and then lengthwise into strips, and fry over medium heat. Yummy.

You can also use firm yellow ones with rice and beans. Just fry them a bit at the beginning with any other vegetables that you put in, and then cook as usual once you add the beans.

They are also used in mofongo - kind of mashed plantains that you eat with meat and gravy.

You can make plantain tarts if they're the ripe ones I assumed you were talking about. Fry them with vanilla nutmeg almond essence cinnamon mash up add a bit of brown sugar and put into a circle of short crust pastry close over and bake. My dm makes the nicest ones ever

Ooh yummy, my fave! I wait till they're super ripe (yellow, on the verge of turning black), then slice diagonally and bake them, with nothing added. They kind of caramelise themselves, and you end up with sweet almost gooey yumminess. Enjoy!

Thank you so much, mine are green and I can't believe I forgot to try them yesterday as I had deep fat fryer out for samosas. Will definitely try them later in the week.
