Meatball recipie please!

have pork mince, onions, tomatoes etc. anyone got a fool proof recipie?

This is mine - whizz 2-3 slices bread in food processor, add onion, chop finely. Add 1 egg, 1 tsp herbs eg thyme or sage would be nice with pork, 1/2-1 tsp salt. Whizz briefly. Add 500g mince, process very briefly until mixed (overmixing makes it tough). Then shape into walnut-sized balls with wet hands. Place on baking tray on non-stick liner/paper, bake for about 10-15 min in mod hot oven (I choose 180C) - or fry, up to you. Baking is easier. Make basic tomato sauce (unless like me you choose Bertolli's finest), heat. Add meatballs (freeze the excess) and there you go! These are very soft-textured (the more bread, the softer they are) compared to bought ones I find.

For tomato sauce, you chop onion and garlic finely, and fry until transparent (butter and olive oil nice combination), add squished up and peeled tomatoes, salt if you are into salt (I am), add a shake of oregano, simmer until thick-ish. Add a tsp of sugar if the tomatoes are a bit sour.

can i leave out the egg? dd3 has a possible egg allergy, so will need something else to bind?

we bind ours with melted pure spread for the kids... we bind ours with sweet chilli sauce.... we even use the sweet chilli sauce on the pasta instead of a tomato sauce...

I add grated apple, which the children like and no egg. Just squeeze hard and put in the fridge to 'form' for a while before cooking.

If you want a really quick meatball receipe take one packet of good quality sausages and cut each sausage into about four pieces bang them with your first (lightly) to make into rounds) roll in flour and fry and they make the most delish meatballs served fresh tomato sauce in a fraction of the time.

Another nice touch is out a cube of cheese in each meatball - cheddar, mozzarella or that mexican style cheese are really nice. When you cook the meatballs it melts inside and goes all lovely & gooey
