Just that really, can't think of something special for Christmas day and DH is gluten intolerante, found out this year, so the usual Chritsmas pud and cake are off the menú.

I was going to say I just buy a gf christmas pudding, and then remembered thats not an option for you.

I make fruit cake with a recipe that is heavy on the ground almonds already and then use a gf flour for the rest. Or the Nigella golden fruitcake is entirely gf already.

If you've found a reasonable flour, then make a sponge and do trifle?

Do nigellas flourless brownies! Use the best plain choc you can, they don't need the sauce but serve warm with cream for pud (ground almonds instead of flour so v rich!)

Delia's chocolate torte, i don't bother with the amaretto biscuits on the top, so it's just like a rich chocolate mousse. Don't know how likely you are to get liquid glucose where you are though...

Have a look at Elana's Pantry website for good gluten free baking.

I have a brilliant recipe for gluten free gingerbread men. You could do meringue with a chocolate ganache, raspberry or passion fruit purée....on the same theme pavlova. Creme Brûlée, home made no churn honeycomb ice cream with charred pineapple. Baked cheesecake - base can be made with almonds, butter and sugar.

New had a wheat-intolerant guest for Christmas a few years ago. I did pears poached in red wine, and served it with a bruleed coconut milk rice pudding. Had Christmas pudding for others, but everyone had pears with the Christmas pud too, worked really well together.
