I have recently treated myself to a KitchenAid which I LOVE LOVE LOVE! My DH is being seriously neglected at the moment but who cares I have a KA :D
Anyway I am now making my own bread with success! It tastes great and the satisfaction of making it, is, sadly, amazing! haha
My question is do I need to let my bread rise twice?
my method is currently:
bung everything in the KA & let it work its magic
Remove dough, knead a bit (just so I feel like ive done something)
Put in a greased bowl with clingfilm and let it double in size
Knock it back
quick knead
put in a loaf tin & cover.
Let it rise again to satisfactory loaf size
put in the oven
If I do need to let it rise twice, can someone tell me why? what are the benefits?
I don't mind what making it the way I am at the moment, it doesn't take really more than 10-15mins I just want to know the best way so I get the best loaf I can :D
Also, I made a sundried tomato and parmesan loaf the other day and the tomatoes on the surface slightly burnt. Would covering in foil for part of the baking stop this? Other than that it was lovely :)
