Made a rhubarb crumble cake today

I went to visit a castle recently with my family and in the cafe they had a lovely rhubarb crumble cake, made up of sponge, rhubarb and crumble topping.

Tonight I'm going to a bbq and am down to take cake or pud so thought I'd have a go at it. This morning I bought a crumble mix,sponge mix and tin of rhubarb and made one....I know totally cheating but it was an experiment It turned out so well. It's gorgeous and embarrasingly easy to make. I'm no baker so am especially pleased

It goes nice with a dollop of custard Well...I had to try it to make sure it had cooked properly

strange, where does the sponge go then?

I put the sponge mix in tin first then dolloped rhubarb on after I'd blotted it with kitchen roll, then put crumble on.

I'm going to use 2 sponge mixes next time. One on first then rhubarb then another on top to give it more sponginess

I am really not sure about this! It's making me think of Racheals cocked up trifle recipe in friends.

Well you should try it I got the ingredients from asda. 32p for crumble mix and similar for sponge, 52p for big tin rhubarb, smaller would do. Just greased and lined square tin and cooked for half hour...ish. Kept checking on sponge to make sure it was cooked after 20 mins. It would serve 12 normal people but I would probably eat a lot more than that.

I wouldn't knwo what to do with a packet mix! I might try it next time I am baking tho. I've been fancying bakewell tart for weeks and not got round to it, need to pull my finger out!

Well you could use proper stuff

They're so easy to use and a total cop out but it was just to see. It was cheaper than using all my ingredients myself. Took me 5 minutes to put together.
