Just wanted to share this recipe with you, as I just chucked all the vegetable lingering in my fridge in and it was delicious, really warming on a cold afternoon.
Fry a finely chopped up onion (or two), 3 carrots, 2-3 stalks of celery, 1-2 leeks, 1 parsnip, 1 courgette, all chopped up or diced, in some butter for 10 mins until soft. Add a large chopped up baking potato (or 2-3 normal sized potatoes) and enough boiled water to just cover the veg, plus 1 and a half Kallo stock cubes (I used chicken).
Bring to the boil, then simmer for about half an hour-40 mins until all the vegetables are very soft. About 15 minutes towards the end throw in some cherry tomatoes (around 10).
Then whiz with the blender until smooth (should be quite thick) and season with some pepper. Goes great with some crusty bread and I suspect even nicer with a swirl of cream.
