The Good housekeeping ones are very good, tried and tested with loads of basic recipes and very clear instruction and illustrations.

It's for my brother, he likes cooking but I'm not sure what his level is - not experienced but keen to experiment!

Any of Yotam Ottolenghi's books are great. Not difficult but the recipes are involved and delicious! Interesting middle eastern flavours.

I know you said not celebrity but for a basic, 'how do I do this' cookbook you can't beat Delia, imo.
