Vegetable Chilli

I have a small gathering on Saturday that seems to have got to medium size unintentionally, I am doing a meat chilli in the slow cooker, but have now been told there is a couple of veges. Has anyone got a good vegetable chilli reciepe in the slow cooker or out. Would prefer without the use of quorn

2 - 410g cans of red kidney beans drained and rinsed
1 - 260g tin sweetcorn drained and rinsed
2 - 400g tins chopped tomatoes
1 - onion peeled and cut into chunks
2 - Courgettes, trimmed and diced
1 - garlic clove peeled and chopped
1 - tsp ground cinnamon
1 - green chilli deseeded and chopped - add more if required
2 - tsp dried chilli powder
1 - tsp turmeric
1 - tbsp tamari or soy sauce
1 - large beef tomato chopped

Preheat oven to 180 degree c/ gas mark 4
Mix all ingredients in a large bowl, transfer to a casserole dish and bake for 40mins

I often put a tin of mixed beans in as well as the kidney beans

A simple but tasty one is:

fry onions, peppers, courgette and mushrooms (and any other veg you fancy) in oil and chilli powder, add tin of tomatoes and tins of Kidney Beans in Chilli sauce and Mixed Beans in a Spicy sauce. Then add tabasco/chilli powder to taste.

(Using the beans in a Chilli/spicy sauce makes it much richer and more tomatoey (if thats a word!)
