Apricot & prune stuffing recipe please?!

chop two medium onions. fry gently till soft not brown.
Add spices, a grating of nutmeg, a clove or two (v strong, don't overdo it)
normal seasoning. Add a splash of liquor (brandy, marsala) cook out alcohol. add finely chopped sage (again, two or three leaves). Chop up dried apricots and prunes and and warm through.

put to one side. brown off pork mince in the residual juices, tip spice and fruit mix back in, mix well. add two or three handfuls of pitta soaked in milk (trust me here!) crumbled down. mix well, add a bit of chicken stock if you think its too solid. or milk.

I would also add some chopped cheshnuts.

Pat mixture into baking dish. If you want to stuff the bird, then stuff at the bottom end, not the cavity.

Voila!
