Frozen fruit in muffins ?

HaveToWearHeels · 24/11/2013 10:41

I have a bag of blueberries and a bag of raspberries that I need to use up and was thinking of making some muffins.
Should I defrost the fruit before I use it or could I fold in the frozen fruit ?
One they are baked could I then freeze the muffins for lunchboxes ?
Thanks

I add frozen blackberries etc straight into cupcake mixtures (no defrosting), and they cook fine, so I guess it's the same with muffins. Just make sure they don't have lots of ice on, as that may make it too wet, I just brush off the ice.

Also, fine to cook from frozen fruit or veg, then freeze the resulting product.

I always use frozen fruit in muffins as it is so much cheaper than fresh fruit. However I give the muffins a few more minutes than the recipe suggests.
