OK, I have skinless boneless chicken breasts. Need using today.

I have some Boursin, potatoes, garlic, broccoli, green beans, pasta, rice and the usual storecupboard full of things I'm not sure what to do with. Mirin anyone?

Please inspire me on how I can combine any/all of the above with the chicken for a lovely meal which tastes cordon bleu and is, in fact, the work of minutes.

Righty, butterfly the chicken breasts, smother the inside of the butterfly with Boursin and garlic, then close up and pop in the oven.
Serve with buttery new potatoes and broccoli.

When shall we be round for tea then? Grin

Yum, sounds good. Only just realised that actually they are skinless boneless chicken thighs. Doh. Will it make any difference?

Come on over any time before Dr Who starts - will not be answering the door after that Grin

chop potatoes into small cubes, toss in olive oil and herbs. spread on roasting tray with 3-4 unpeeled garlic cloves.

Prepare chicken breasts as suggested by mogz, lay on top and roast until cubes golden and chicken cooked through. steam beans and broccoli. If you have any cherry toms tuck them in amongst the potato cubes.

If you feel like it, make a herby tomato sauce to serve with it. caramelise some onions and garlic, add a tin of chopped toms, add a splash of vinegar and a pinch of sugar plus normal seasoning, and cook down very slowly. Until sweet and unctous. loosen sauce with a splash of water if too solid, but better to do that than have runny uncooked toms.
