Argghhh, I've been asked to provide the food for the PTA's xmas get together. There will be 20 people in total and I have a budget of £2.50 per head. I'm struggling for ideas that are easy to transport hot, will need to be a veggie option too. So far i have a few ideas but need more inspiration - i have to email ideas over tomorrow, HELP!:

Beef Chilli / Veggie Chilli
Build your own Burritos - chicken and veg
Chicken curry / veg curry
Lasagne's
Mac & cheese
Tagines

They all sound great. The veggies might like Stuffed Baked Potatoes - baked, scooped, add cheese and spring onion, restuff... wrap in foil etc. A nice cheap dish would be Boston Baked Beans... a more glam version of the canned type using belly pork and molasses. Pies/pasties are pretty portable... the hot water crust raised type travel very well and you can fill them with layers of colourful vegetables or traditional pork mixtures.

Lasagne is a fairly simple option - if you do a beef mince base, then a tomato layer then a cheese sauce for the meat option and use lentil and mushrooms instead of beef for the veggie option. Easy to do big bowls of green salad, roasted veg - peppers, onions, courgette, lots of garlic bread and crusty bread to go with it. And you'll be in budget too!

Thanks so much, baked potatoes are a genius idea! Love the lentil lasagne one too. Brilliant, thank you.
