Alternative lasagne recipes

It turns out my 3yo and 5yo both love lasagne (rare for them to agree on anything!), as do we. We always do the basic bolognese/white sauce version, but I fancy branching out and trying some alternative recipes to see how they like those. Any suggestions?

My SIL makes it with left over chicken and H*z Cream of Tomato soup. Not sure what else she adds but it is the food of the gods.

Nigella has two lovely recipes, Quick Calabrian Lasagne from Nigelissima and Mexican Lasage from Kitchen (I think) which isn't strictly speaking a lasagne but it is delicious.

I also like lasagne made with meatballs instead of regular mince, pork or beef or a mix of the two.

I regularly do a roasted vegetable lasagne (courgettes, peppers, red onion, cannellini beans, brocolli in tomato sauce then bechemel on top). I have also done a bbq chicken one which my OH likes best, www.bbcgoodfood.com/recipes/11063/bbq-chicken-lasagne

I do spinach and mushroom with cheese sauce, and added cheese on top.

If I cba to make a white sauce then I grate Italian hard cheese Parmesan and a little bit of nutmeg into creme fraiche. Fillings are either butternut squash, spinach and mushrooms or roasted veg (courgette, aubergine, peppers, mushrooms) and olives.
