Lots of leeks - inspire me!

I have 8 large leeks. What can I do with them? Am a bit bored of the ubiquitous chicken, mushrooms, leeks in a creamy/white wine/garlic sauce that I always resort to.

And main meals please, I only do soups at the weekend, and will doubtless do a soupy lunch using any still hanging around on Saturday!

Especially interested in any veggie meals?

If you aren't wanting to eat them all soon, you can put them in the ground - 6 inches deep and pull them back up when you are ready.

Leek and cheddar fritatta.

Cook leeks and some onion in butter, par boil slices of poatato. Layer in a dish and top with cheese then cover in beaten eggs and bake.

Made this at work today and it was very popular :)

Frittata sounds delicious. Might add a glug of double cream too. Why not?!

I've remembered I have some homemade lamb stock in the freezer so I might do some pearl barley in that with some chunky carrots/celery/onions/ leeks all caremlised up and some shredded cabbage through it as a hearty stew this week. I might get that past DH as dinner, but leek & pot soup for example, no chance!

Breastmilk I am dangerous around mashed potato, I can eat my own bodyweight in it so tend to try and avoid cooking it very often but my god, that with sauteed buttery leeks.... yum.

Fascinating about planting them.

Creamed leeks are the nicest thing to have with roast meat and potatoes in winter. Basically they are leeks in white sauce, so you melt some butter then fry leeks, add in white flour and make a roux around the leeks, then add milk gradually. Probably freezes (and certainly makes a good base for any kind of pie, particularly leftover Christmas dinner).

We like leeks in our pesto pasta. They are great roasted too and of course in soup with carrots and lentils. When I do roast chicken i stuff the carcass with sliced leeks, mmm, they are heavenly. When I have too many I slice them and freeze ready to add to casseroles and soups.

Hairy bikers Lasagne!!!!!!!! you use the leeks as sheets in replacement of pasta sheets!!!! seriously yum and low fat!!!!!!

Use some as a base for tagine :) throw in some potatoes, carrots, parsnip and chickpeas. Serve with couscous. :)

I've made ham and leek lasagna before which was lovely! Fry leeks and ham and then add the cheese sauce. Layer with lasagna sheets and top with tomato lasagna sauce and cheese an stick in oven! An sure u could substitute the ham for other veg Grin

Leek and blue cheese risotto - fry slices of leek, add rice, gradually add stock as you normally would to make a risotto, when the rice is cooked, add the blue cheese and black pepper. I like stilton. Really tasty.

Use them instead of onions in any recipe. I particularly love them in stews. A vegetarian student friend used to make this gorgeous dish: cooked leeks and hardboiled eggs, halved, in cheese sauce, topped with mashed potato. Grated cheese and/or breadcrumbs on top, heated through in the oven. Had forgotten about this dish til I read your thread so thank you for reminding me !

saute down with butter,bacon(without or with onions garlic for veggie)
make a cheese sauce
cook a pan of pasta
mix together,sprinkle with cheese and bake.yummy.done:)

cook some potatos.againg saute leeks down with bacon
the mix together in a dish and sprinkle with cheese and bake.it makes a great side or even main.

Whole leeks wrapped in ham, cover with a cheese sauce and bake in the oven. Was a recipe on Blue Peter many moons ago (think Simon Groom!!) that my mum made. It was yummy!!

Although the leeks are not in your larder anymore I'm sure, I've made a leek & chestnut gratin, yum
And roast meat sitting on top of leeks, they go all silky and soft, also yum

Soften in butter & a dot of oil. Add chopped leeks & cook slowly slowly til they're nice & soft. Add tarragon, s&p & cream cheese like Philadelphia. Yummy

What about soup? Cock-a-leekie soup, leek and potato soup...

Or if you like risotto there's also some nice risotto recipes which involve leeks.
