What are your popular veggie dishes for kids?

DD has decided to stop eating meat, which is no biggie; in fact, it suits me down to the ground. However, I'm certain what I like won't necessarily be what she likes.......of course!
Your favourite, tastiest, easiest & cost effective recipes would be very much appreciated.

We're not veggie but my DC love egg fried rice. Very cheap and easy to do. Standard version is rice, egg, frozen peas and sweetcorn, sesame oil and soy sauce. But you can add loads of different things to it, other veg, or meat for you if you fancied it (not sure if you're a veggie too). It's great with some sweet chilli sauce too.

We arn't veggie either but we do have a number of veggie meals that we all enjoy, we often eat veggie 2 or 3 times a week, partly to save money.

Frittata with cheese, diced veg such as carrots, peas, sweetcorn
Pasta with roasted veg and tomato sauce
Baked potatoes with beans and cheese
Macaroni cheese
Yorkshire puddings with veggie stew filling ( or with beans and cheese!)
Minestrone soup or carrot and tomato soup or tomato and lentil soup and crusty bread
