Gluten free stuffing alternatives - any suggestions

Most of our Christmas dinner is GF by default and I will buy a GF pudding for our GF guest. However I'd like to make something that takes the place of stuffing - so lots of flavour for our GF guest. Please could you suggest any ideas or recipes?

Quinoa, chopped chestnuts, onions and some orange zest or maybe cranberries. Follow instructions for quinoa on the pack then mush it up with some sausage meat and roll into balls or in a shallow dish and bake in the oven. Make your own sausage meat or ensure that supermarket/ butchers version does not have rusk in it.

Or quinoa, buckwheat, sage, onion and lemon zest and some almonds or walnuts chopped then cook as above.

You can buy gluten free bread and use those as breadcrumbs or you could make cornbread with maize flour.

The Coeliac UK website has some good recipes but you have to register.

I feel like a bit of an idiot not having thought of GF bread. I can just make all of our stuffing out of that. Thanks.

I love chestnut stuffing it's soo tasty (you just add the sugar free puree to a mix of cooked chopped onions and garlic plus whatever other veg you like with the breadcrumbs or not) and I make it now then freeze for the veggies and wheat free\ GF people in our family.

I just adapt normal recipe and use gf bread zapped into breadcrumbs. M & S do a lovely range if gf stuffings at Christmas.

I just read this and thought of you OP

Butternut Squash, Brussels Sprout, and Bread Stuffing with Apples Scroll down a bit for the gluten free bit. I think I might be making this one soon if not for Christmas.
