banana cake?

My elderly neighbour has just given me about 20 overripe bananas Grin

I thought I could make cakes with some of them, and freeze them.

I usually make a simple cake mix with 4oz each of butter, flour and sugar, and two eggs. How many mashed bananas should I add to that? I thought one or two. Should I also reduce he sugar given bananas are quite sweet? Maybe 2oz of sugar?

Is there a better recipe that I could be using, maybe with a few spices or something? Or any other ideas for using up lots of bananas?

I make muffins with bananas, not cakes, but my recipe, which makes 12 muffins is:

200 g flour
1 t bicarb
1 t baking powder
1/2 t salt
3 bananas
150 g caster sugar
1 egg
75 g butter

I have also made a loaf pan bread with this recipe.

you can mash the bananas, weighed them in portions and freeze.
thaw on the night before wanting to use.

or make ice lollies - just blend with a bit of milk or yogurt until smooth and freeze in lolly moulds
yum!

Ooh, that is a good idea to mash and freeze!

Will try your recipe too, Tee, maybe I will do double and put half in muffin cases and half in a loaf tin

There's a MN banana bread recipe on here which I've used loads of times now - it is the best I have ever tried!
I normally reduce the sugar (in recipe 5oz) to 4oz, then sprinkle a tiny bit of crunchy demerara on top of cake before putting in the oven. Gives the top a nice, crunchy texture.
Sometimes I also add a handful of finely chopped walnuts to the mixture.

Banana flapjacks are also good, plus there's a really nice banana bread recipe which I saw in the Guardian Food section which uses up 5 of them and is really nice.
