Half a lamb cuts. Help needed!

I have just had half a lamb delivered and while I can identify most of the cuts there are 2 bags I'm not sure of. One is very flat and large, it's folded over on itself and the other is a bag of what I can only describe as bits and bobs - boney, fatty bits. Not really sure what to do with this - maybe stock?

This is me trying to move away from supermarket meat and buy fresh and local I'll get there Smile

The first cut sounds like breast; which is fatty but tasty. from what I can remember, it needs a long time cooking. If you have access to the River Cottage Meat book, it has a section explaining the different cuts.
