Can anyone guide me to a quick and easy-peasy recipe for homemade confectionery. Have a great one for chocolate fudge without need for sugar thermometer etc. but need to make something else as well... Smile

Peppermint creams? (Or orange/rose/other flavours)

Make some stiff water icing (icing sugar and water), add a splash of glycerine to keep it from going hard, then add peppermint/orange/rose/whatever flavour essence you want. Roll into balls and flatten slightly. Put in fridge.

Melt chocolate. Dip fondants in chocolate, or paint on both sides with a pastry brush (best to allow one side to cool before doing the other)

Yum.

These are old family recipes. Both have high fruit content and the Apricot Balls have no added sugar (just a little honey). I am not a date fan at all but Heavenly Dates are amazing and very easy and both adults and children love them. They also can be called Heavy Dates depending how you feel (but they aren't heavy).

Fiona's Heavenly Date

6oz butter
1 C sugar
1 egg
1 1/2 C dates
3 C rice bubbles
1 tsp vanilla

Melt butter. Beat sugar n egg. Combine n cook gently 1 minute. Add chopped dates. Cook 3 mins. (I think 5).
Cool. (2 room temp my advice)
Add vanilla.
Rice bubbles.
Roll into balls in coconut

APRICOT BALLS

250gm dried apricots
3/4 c boiling h2O
2 tbsp honey
1 1/2 c coconut plus extra for rolling

Put half apricots in boiling H2O. Stand bout 1 hour.
Put those apricots with honey in pot. Stir over low heat till honey dissolves. Bring to boil, reduce heat, simmer uncovered 10 mins. Put in blender n blend till smooth.

Combine with rest of apricots chopped, and coconut. Mix well. Roll in balls. Coat with coconut

You don't need sugar thermometer to make high sugar sweets. I've never used one. You just need to know your sugar stages: soft ball, hard ball, crack etc. You can google what they are.

Then you can make coconut ice, toffee, fudge etc.

Coconut ice is dead easy. I haven't got exact quantities but it's condensed milk with dessicated coconut. Make two batches and colour one pink. Press the uncoloured mixture into a square tin and the put the pink layer on top and chill in the fridge for a couple of hours and then cut into squares

Take dates, remove seeds. Stuff each with a cashewnut. Serve!
