Can I start making my mince pies now?

I've got surprise days before starting work (start date was delayed) with DS at childminders - I'm trying to get ahead as this will be my first time back at work since DS was born.

I've got a freezer full of made ahead lasagne and shepherd pies and I'm going to be mashing and freezing portions of potatoes but I was wondering if I could make my mince pies now and freeze them?

What other Christmas recipes are people making ahead about this time of year?

Yes, you can make & freeze them now. Freeze them all flat or with interleaving paper (or foil) between the layers so they don't stick together.
