Veggie meal- what to do with stuffed peppers

I am doing dinner on a weeknight for us and some friends next week. Dh and friend are veggie. I was thinking of doing lovely stuffed peppers - I do them slightly sweet, Greek style with rice, tomatoes, pine nut, cinnamon, raisens and cumin Usually I also put cubes of halloumi in. Delicious. But not really substantial enough alone for dinner with friends?

Usually dh will have a veggie sausage and I have a lamb chop. I don't like to serve meat replacements to other veggies.

So was thinking of taking tomato out of peppers and instead doing a lovely buffalo mozzarella, tomato, avocado salad of sorts with olive oil and basil alongside peppers. What do you all think?

Peppers sound lovely. I'd lose the veggie sausage (not needed) and serve something else Greek style alongside, such as Greek salad (in which case have feta in the salad and lose the haloumi from the peppers).

I also like Greek style garlic roasted potatoes (although not really necessary as you've got rice in the peppers - I'm greedy though!). These are lovely with tsatziki too.

Peppers sound really nice. How about starting with some hummus and olives and feta with warm pita bread then have the peppers with a spinach and toasted pumpkin seed salad as well as tsatziki in separate bowls for people to help themselves. All pretty easy to prep in advance

Great ideas, thank you. I think the idea of keeping it greek is a good one. I like 21's meal idea and may go with something along those lines. Thanks all.
