Anyone ever made pine nut marzipan?

Husband has a nut allergy but is fine with pine nuts (which are a seed). As they are quite similar to nuts, having a high oil content, I wonder if you could make marzipan with them, toasting and grinding them first. It's for our Christmas cake - usually I just put the royal icing directly onto the cake the day before but it does tend to get a bit discoloured after a couple of days & I just fancied trying a nut free marzipan this year.

Anyone who has tried this (or any other ideas for nut free marzipan) your advice would be appreciated!

Hmm, not sure it would work & with the price of pine nuts it would be really expensive.

I hate Marzipan and just use 2 layers of icing to top the discolouration, let the first layer harden first.

I can't imagine it would taste nice. Pine nuts are a bit soapy, and not really nutty.

I second the two layers of icing instead. Colour the first one yellow for a traditional look.

Thank you for replies - 2 layers of icing is a great idea!
