you can make a really nice spinach and cheese pie, using couple of cheeses like feta and cheddar. fried onions with the spianch then layer it with filo pastry on top. GO to taste.co.uk then 'recipes' then search under spinanch and feta as ingredients (under search in more detail).

Put it into a garlicky lentil soup flavoured with cumin and lemon (sorry, I sound like Nigella, don't I - this is a variant on the Basic Thing I have cooked since a wholefoody student).

Have a cheese sauce - I'd say blue cheese sauce but you can't have it - with the spinach and pasta.

Put it into a chickpea curry (add potatoes to the curry if feeling in need of aloo).

I LOVE spinach.

Twiglett, if you eat fish, you could have a nice sauted salmon/creme fraiche/spinach sauce to go with rice or pasta. We had this last night and everyone ate it including dd aged 6.5 months.

Lightly saute/fry spring onions/shallots in a pan with some garlic and mushrooms, add spinach and alow to defrost, add pinch of chilli powder, then add diced cheese and just before serving add some mayonnaise. Looks disgusting but I LOVE it.

Saute in garlic and olive oil and season well. Serve it with anything.

OR

Pasta with Mascarpone and Spinach

Melt butter and fry 1 chopped onion til soft. Stir in 1 chopped garlic clove, 2tbsp thyme, spinach and seasoning for 5 mins stirring til heated. Stir in 8oz mascarpone and heat. Drain the cooked pasta (12oz) and mix into the sauce. Serves 4

I love mayonnaise, I eat stacks of it. Sorry - you could always miss the mayonnaise out.

Lots of garlic, butter and a big dollop of cream, add salt and ground black pepper. Yum!

What about in a lasagne - add a good layer of defrosted spinach in the middle. So it would go pasta then mince then pasta then spinach then cheese sauce then pasta and then back to mince. I can use about a 1/2 bag quite easily in one layer.
