What can I do with leftover veg?

I am currently cooking Sunday lunch and have put lots of extra veg on with the idea I will do something with it, but Im not sure what.

There will be left over roasted sweet potato, potato and butternut squash, and probably some left over carrots, broccoli and cabbage.
so do I make a soup or bubble and squeak or any other ideas?

I'd probably do soup with that lot but someone will be along with a far more exciting idea.

Make a cheese sauce, pour it all over the left over veg, stir, then top with grated cheese and bake till the cheese topping is nice and brown and crunchy.

Oh I love B&S but dp always eats EVERYTHING, so I never get any leftovers. :(

The roasted sweet potatoes and bns would make a good soup - fry onion and spices, add the vege, add coconut milk and maybe lentils. Cook and then blend.

Oh or mash the sweet pts and bns, add onions fried with some spices and use as the filling for qaesadillas.

Leftover veg I quite often stick in an oven dish with grated cheese on top. Serve with yorkshire puddings. Sometimes some meat too depending how much veg there is

I always make a tomato sauce and add some cannellini beans, the leftover veg and serve with cous cous.
