any ideas for using leftover pumpkin pie mix?

I got an edible pumpkin to carve for halloween, and have made a pumpkin pie and 12 mini tartlets with the resultant puree - however, I now have a bowl of pumpkin/evaporated milk/spices/eggs in the fridge, and no idea what to do with it! I have googled, and there are some ideas for pumpkin bread, but they all seem to just be for the puree/spice mixture, not the 'custard' that I have.

Does anyone have any ideas?

How about adding some flour and making pancakes or drop scones?

No idea if this would work, never done it before, but sounds feasible.

Is there difference between carving and eating pumpkins? I bought carving but have retained the flesh to eat in a pie. Will it be horrible?

I think carving ones tend to be bland, although edible - sainsburys had smaller eating ones and larger carving ones, so I just opted for the smaller one - the mini tartlets are rather good anyway!

I'm OK with a bit bland, it's the sugar and spice bit which I'm realy looking forward to, not the pumpkin bit Smile
