Gammon in slow cooker. Why 8 hours?

Looks pretty cooked to me. 6 hours in, 700g. Does it taste better the longer it cooks or will it go hard?

It will go dry and overcooked if you leave it - I usually find 4 hours is enough (depends on your slow cooker)

Took it out, almost perfect tenderness. If taken out an hour later, would've been more to my taste. Very salty though, and I am did leave it in water overnight.
