How do you make potato wedges from scratch?

Have lots of potatoes and fancy making some wedges for tea tonight but when I have tried in the past they have been a bit soggy. Help!

I cut them into wedges, drizzle olive oil and whatever spices I fancy onto them then put in a HOT oven for about 15-20 minutes. Oven temp makes all the difference.

par boil them for 5 mins and let them drain so they are not too wet. put in the oven in a tray with some hot oil and they should crisp up lovely in 30 mins or so.

I would say cook them at around 220-230 c after par boiling them

I do mine without par boiling usually, but agree to cook them hot. Usually add garlic and rosemary too.

slice up, mix some chilli powder/cumin/corriander/ or whatever spices you like with olive oil (!), rub over potatoes.

Put in oven at 200 for about half an hour, more if thicker.

I never par boil.
