Lentils???

Have a big packet of lentils in the cupboard but no idea what to do with them.
Can't even remember what I bought them for!

Come on all you supercooks, what can I cook?

Dahl
Lentil and bacon soup
Chicken/lamb/dhansak (curry with lentils)
Mulligatawny soup
Thick vegetable soup with lentils

Save it for autumn and make red warmer soup. Don't have exact proportions but basically red lentils, garlic, celery and carrots and stock. Cooked together for 45 mins slowly, then blend to make lovely creamy soup.

Here's my lentil and vegetable soup recipe:

Dissolve a stock cube in 500mls boiling water.

Add 4 oz red split lentils (rinsed) and bring back to boil for 5-10mins. Then put a lid on and let simmer.

Chop a sweet potato into rough cubes and add to lentils.

Grate 3 carrots into the mixture.

Add a finely chopped onion (I like a red onion best)

Add a cube of frozen spinach (optional) and simmer for a further 5-10mins.

Soup is ready when you can crush the sweet potato chunks against the side (or about half an hour from adding the lentils)

Delish with ciabatta and butter!

Did a fabby roasted cod loin served on a bed of tomatoey/herby puy lentils yesterday - very easy if you want recipe? (I bloody love lentils, me )

Tatties - I make a soup virtually identical to that one (minus the spinach), except that I add butter beans, chopped red chillies, garlic and 1/2 pint of passata....scrumptious

I also use red lentils in things like lasagne (I know it sounds gross but bear with me!) as when mixed with mince, are virtually undetectible by dh who is scared of healthy food. I call it health by stealth (which is trade-marked by the way for when I write my cookbook )

Sprout your lentils... very delicious and a lovely crunchy thing in summer to eat.

sprouted they are nice with toasted seeds or grains... i like to add a oriental sauce of my own making
lentil sprouts are nice in fried rice... in soups

etc
