Italian tuscan rustica cabbage soup

This is for all you soup lovers out there , also good for diets too.

You need

Large soup pot
Griddle pan

medium white cabbage chopped into mouthsize peices
Tin of borlotti beans rinsed well
2 large garlic cloves chopped finely or pressed
1 large onion chopped finely
1 litre vegetable stock , I make mine with Knorrs liquid veg bouillon.u could use stock cube but I find them too salty for this , as it is main ingredient.
Paprika
1 chilli de seeded & finely chopped or 1 pinch chilli powder (optional)
garlic olive oil
Par baked ciabatta sliced into cm peices and drizzled with garlic olive oil (both sides)

On low heat for 10 mins in large soup pot soften onions and garlic with a little oil & butter (optional). do not brown otherwise will discolour soup
Add in stock, season to taste and add pinch of paprika. this is were u can add chillis if u want.
Add in the cabbage bring to the boil and simmer until cabbage is nearly cooked.
At this point start the ciabatta, heat a griddle until smoking. Add bread and leave to score turn over and do the same takes 5-6 mins , whilst beans are added and heating through

Serve steaming with slices of bread. Very comforting.

youd have to bin the olive oil M!
I have a siimilar recipe somwhere and it was nice..the beans arent very Low in cals tho either

I have been reading that we do actually need some fat for our brains to work properly. Im not dieting Coddy at mo cos of ongoing condition made worse by reducing food.

The spray stuff could be used but its vile.
