Ideas for interesting chicken soup?

So I've got a leftover chicken from last nights roast..

Plenty of meat left and have the carcus (?sp) I can make stock from.

Am wondering if anyone has a recipe for soup- something different from my usual root veg which is getting boring..

On mat leave so have all the time in the world to get ingredients/ cook.. Smile

Make the usual chicken soup but make Yorkshire puddings with fresh herbs for dunking instead of bread. Yummy.

Cook stock with a cinammon stick,couple of star Anise ,chunk of fresh ginger.Add rice noodles,peas,baby corn and garnish with chopped coriander,fresh lime and soy sauce.

Chicjen noodle soup always goes down well in Casa Wordfactory.

Add scraps of chicken to bean sprouts, peppers, carrots (whatever bits of veg you have in fact), plus stock, plus soy sauce, ginger, honey and noodles.

Mm both of those sound lovely.. I never think of oriental themes for soup so stuck in a rut with usual suspects- carrot, celery, swede..
