Speedy inspiration needed please

Am doing an order and need inspiration for what to eat this week, please.

Needs to be veggie, with no tomatoes at all ideally and deffo no tinned tomatoes.

I fancy - some sort of soup
something cheesy that isn't macaroni cheese
something Chinese-ish
Open to any other ideas too!

Butternut squash or potato and leek soup
Vegetable lasagne
Chinese style stir fry with noodles
Frittata for a quick lunch

Only need dinners - at work for lunch, so usually just take oatcakes.

Butternut squash soup sounds excellent - have you got a good recipe?
Stir fry is what I'd usually do but fancy a more adventurous/authentic recipe.

The Lorraine Pascale butternut squash soup is lovely, and cos you roast the fecker no need to peel and chop up raw.

That's an aside.

Leek and potato soup? Is it cold enough down souf?

Sweat leeks, potatoes, bit of onion, bit of carrot in pan. Add stock. Season. White pepper,please. Cook til lovely. Blitz if you don't like bits.

Or, I made actually very nice soup with packet of frozen peppers the other day: peppers in pan, add stock and seasoning. Blitz.

Broccoli and Stilton soup, vegetable tempura with noodles/stir fry, chickpea and mushroom curry, but roast.

On holiday, so can't get exact recipe, but I think it's like this: marinade tofu in soy, ginger, garlic, chilli. Maybe sherry or shaoxing wine?? Slice onions and green peppers.

Stir fry onions hot until brown and crispy, take out of pan, add tofu and fry til nice, the add green peppers, onion back in, very tasty with rice with coriander in it or noodles.

Thanks, MF. The 2nd one sounds nice. The first is too 'fusion' for me - I like tofu in recipes from cultures where tofu would normally be found, if that makes sense. Fussy, sorry.

Cauliflower cheese? it's one of our comfort dinners with veggie sausages and carrots.
Mushroom risotto, add any other veg that need using up too.

I know what you mean. The recipe is in a book we have and I would not have ever made it. DH made it to suit when I couldn't eat fatty stuff, and I ate it because he'd triedSmileand surprised myself by liking it.

Does seem wrong though.
