I keep telling people about the popular gingerbread and vanilla shortbread biscuits I make, but I can't keep typing them out when the thread I posted them on disappears.

So, I just want them in one place, so next time I brag about them I can just point to this thread.

so gingerbread recipe

(preheat oven to gas mark 4)

Ingredients :

• 350g / 12 oz plain flour
• 175g / 6 oz light soft brown sugar
• 100g / 4 oz softened unsalted butter
• 3 tsp ground ginger
• 1 tsp ground cinnamon
• 1 tsp ground nutmeg
• 1 tsp bicarb

? mix in a large bowl and rub in butter until you get "soft sand" consistency

? add

• 1 egg
• 1tsp / 5 ml vanilla extract
• 4 tbsp / 60 ml golden syrup (or honey or maple syrup)

(add zest of lemon or orange if you like)

? mix, roll out on greaseproof paper to 6mm / 1/4 inch thickness, stamp out shapes, bake on greased baking tray for 10-15 mins.

? cool then decorate
