American frosting - worth it?

I am making DDs Christening cake for Sunday (not at all traditional).
It will be two tiers and I would like to put sweets and sprinkles around the top edge of each cake.
I'm reading that frosting sets extremely quickly and I've never used it before so I'm a bit worried.

Is it worth the effort? I want it to look good as well as taste good and I just don't think buttercream will give the right effect. Are there any other alternatives?

It's like a meringue topping and it involves sugar thermometers.......
