Cheap vegetarian lunch?

I've got a friend coming for lunch on Tuesday and she's a vegetarian. Me and DP are both big meat-eaters so not a lot of meat/fish free products in the house.
I was thinking about doing a cheese and tomato pizza with some chips and salad but don't know if that's too boring? Any ideas?

Make the pizza less boring with some other veg eg roasted peppers, mushrooms. A nice salad isn't boring. Wouldn't bother with chips alongside a pizza.

I'd make a frittata with chips and salad. You can use leftovers, potatoes, mushrooms, onions and peppers.

Soup with crusty bread and a Bit of cheese.

Buy some nice covent garden soup if you don't want to make it.

As a veggie I think all those ideas sound good. Anything home made shows you've thought about it.
It's pretty cold so a big bowl of soup with small pizza slices/toastie would be my idea of heaven!

Make sure you use vegetarian cheese then. Most Italian and French cheese is NOT vegetarian.

Thanks everyone some really good ideas that I hadn't thought of! Like the idea of soup with some nice bread. Was reading the Asda mag and they've got a recipe for garlic mushrooms on toasted bruschettas which looks quite nice as well.
