stuffed peppers

I've got peppers that need to be used was thinking about doing stuffed peppers any recipes or any ideas on what else to do with them,oh i;m cooking chicken breasts aswell.

I roast peppers filled with garlic, whole cherry tomatos, basil or parsley, anchovies(if you like them), lemon juice, for about half an hour, then put a slice of goats cheese on top till melted and brown. the Juices are gorgeous mopped up with crusty bread.

Fill with rice or couscous and various veg or meat?

saw one this morning where you hollowed out the peppers. Put in a bit of garlic and some basil and then some peeled tomatoes on top. Drizzle on some oil and cook in a reasonably hot oven for 20 minutes. Put some mozzerella on top and achovy fillets in shape of cross. Put back in oven for 4-5 minutes.

Or if you have couscous you can roast the shells and then fill with couscous mixed with some herbs, spring onions, garlic, ginger, tomatoes. Fill the shells and sprinkle bit of cheese on top and put in oven for 4-5 minutes until cheese has melted. Can substitute breadcrumbs for couscous. Would soften garlic ginger and springonions in pan first though.
