Could I do this for DS' lunchbox?

  1. cook sausage rolls/pasties
  2. leave to cool
  3. freeze
  4. get them out individually on the night before
  5. put in lunchbox? TIA

Yes- but make sure they stay cool in the lunchbox, e.g. by putting in an ice pack.

Also make sure that you get them into the freezer as soon as possible after cooking, so they are not hanging around at room temperature. Thaw in the fridge overnight.
