DH picked the above off our tree. Should I try poaching them in sugar syrup or red wine? Was thinking of just peeling and leaving stalks. I think if I peel and core there won't be much left.
Or do I wait till they ripen to eat?

Do both!
Poach any that have damage.
Halve poach and freeze any excess (make fab winter pie fillings)
and then let some ripen and do another batch the next week ...
